Spanish Cooking for Dummies-Tortilla Española or Spanish Omelette

This is a rather simple dish, but tasty and cheap. Nevertheless you are going to mess up your kitchen. That’s unavoidable.

Here´s what you need to cook a good tortilla:

  • Medium sized potatoes (3-4)
  • Onion (optional)
  • Eggs (5-6)
  • Olive oil
  • Salt

Preparation

Obviously, you first peel and chop the potatoes. However, don´t chop them the traditional way. What I mean is, don´t make clean slices on a board. Instead, hold the potato in your hand and cut a little bit with a knife and then break the rest of it off. This is to let the starch out.

Deep fry the potatoes with onion on a medium heat. Put the onion on top so it gets less cooked than the potatoes.

What’s the secret?

Beat the eggs in a big bowl and add some salt. When the potatoes are ready (don´t let them burn!) add them with the onion to the eggs and let it rest for at least a half an hour… this is the secret.

Spanish omeletteWhile the potatoes are cooling down, they will slowly cook the eggs with their heat and the flavours will mix.

Use this half an hour to make a nice green salad which sits perfectly with the tortilla.

 

Now comes the acrobatic part of the dish… Moisten the frying pan with olive oil, let it heat up and pour in the mix.

Flip it the right way

Then you can lower the heat on the stove a little bit, not to let it burn. Depending on how juicy you prefer it, wait three to six minutes and then cover the pan with a dish the same size or bigger than the pan. Flip the pan quickly to place the tortilla on the dish. I recommend moving to the sink, cause it is easy to spill some egg in this risky move. Now you have to let it slip back on the uncooked part of the pan to finish it.

My advise is DON´T TRY TO FLIP IT LIKE CHEFS DO IN CARTOONS, THROWING IT UP IN THE AIR! It never works. Trust me… I tried.

Better not to serve it piping hot, and if there are some leftovers… they’ll be delicious the day after.
